Ingredients
- 1/2 tablespoon of oil
- 2 teaspoon garlic (minced)
- 1 onion (diced)
- 3 carrots (chopped)
- 3 stalks of celery (chopped)
- 2 cups of mushrooms (quartered)
- 1 cup of corn
- 1 tablespoon of tomato paste
- 1 teaspoon of (dried or fresh) sage
- 1 teaspoon of (dried or fresh) parsley
- 1 teaspoon of (dried or fresh) rosemary
- 1 tablespoon of Super Chunk Steakhouse Seasoning
- 2 1/2 cups of vegetable broth
- 2 tablespoons of flour
- 4 potatoes (peeled and chopped)
- 1/2 teaspoon of salt
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of Big Tom's Turkey Rub and Brine Spices
- 1 tablespoon of butter
- 2/3 cup of milk
Instructions
- Filling
- Sautee garlic and onions over low heat until fragrant and beginning to turn translucent.
- Add carrots and celery, stir and cook until they begin to soften.
- Add mushrooms and corn, stir and cook until they begin to soften.
- Add tomato paste, stir to combine.
- Add sage, parsely, rosemary and Super Chunk Steakhouse Seasoning. Stir to combine.
- Slowly add vegetable broth (about a half a cup at a time), stir and allow to simmer.
- Add flour and stir.
- Remove from heat once mixture thickens.
- Topping
- Boil potatoes until soft (test by poking with a fork).
- Strain, and combine in a bowl with salt, garlic powder, Big Tom's Turkey Rub and Brine Spices, butter and milk.
- Mash mixture until smooth.
- Baking
- Preheat oven to 425 degrees fahrenheit.
- Add filling to baking pan, ensure that the mixture is evenly distributed and smooth.
- Add topping on top of filling, ensure that the mixture is evenly distributed and smooth. If desired, add a design to top.
- Bake for ~25 minutes, or until edges begin to look golden brown.
- Allow to cool for at least 5 minutes.
