    • For the most tender breast meat, cook the bird at 450 for 30 minutes, then flip it upside down for the rest of the cook.
    • Baste with melted butter or chicken stock the last hour every 15 minutes for a golden, crispy skin.

    • Stuffing/Dressing: Add a unique twist to stuffing with dried cranberries, roasted nuts, and a pinch of cinnamon. We also use Big Tom’s to season our stuffing. It’s the perfect blend. A sprinkle of all-purpose seasoning ensures the perfect balance of savory and sweet.

  1. Thaw the Turkey Properly

    • Thaw your turkey in the fridge, or brine it on ice in a cooler, not on the counter. Allow 24 hours of thawing for every 4-5 pounds of turkey. For example, a 12-pound bird needs about 3 days to thaw completely.
    • If you’re short on time, use the cold water method: submerge the wrapped turkey in cold water, changing the water every 30 minutes is the safest way to thaw without brining.
  2. Cook to the Right Temperature

    • Use a meat thermometer to ensure your turkey is cooked to perfection. The thickest part of the breast should reach 155°F, while the thigh should hit 165°F because you are going to let it rest, see notes below.
    • Let is rest. After it comes out of the oven, cover it in foil and let it rest at least 30 minutes up to 1 hour. The juices will re-distribute and the temperature will continue to rise to the desired 165°F.
  3. Handle Leftovers Safely

    • Refrigerate leftovers within 3 hours of serving. Divide them into shallow containers to cool quickly.
    • Eat refrigerated leftovers within 4-5 days, or freeze them for up to 3 months.

We sometimes even make the dressing a day ahead and get it out of the fridge 2 hours before the turkey is done so it is ready to bake when the turkey comes out of the hot oven.
    • Check your pantry for essentials like butter, spices, and broth to avoid last-minute grocery store runs.

    • Focus on a few standout dishes instead of trying to cook everything. It’s better to do a few things well than to be overwhelmed.
    • Don’t be afraid to delegate! Let guests bring a dish or two—it’s a great way to share the workload. If they don’t cook, have them pick up an appetizer or wine or something easy.
