This rich creamy soup is a childhood favorite. Paired with a gooey grilled cheese sandwich (gluten free or not) it's just about perfect.

This recipe can also be doubled and cooked in a slow cooker. Takes about 2-3 hrs on high, depending on how full the cooker is.
Ingredients
- 2 15 oz cans of diced tomatoes, low or no sodium added
- 1/2 cup diced onion
- 3 garlic cloves, chopped
- 1-3 tsp Sauce Goddess Super Chunk Steakhouse spices
- olive oil for cooking
- 1 cup water (or veggie or chicken broth)
Instructions
- Drizzle olive oil in a pot big enough to hold everything.
- Add onions and saute over low heat until slightly cooked.
- Add garlic and 1 tsp of Super Chunk seasoning.
- Saute for 3 minutes.
- Add tomatoes and water or broth.
- Cook covered on low for 2 hours.
- Let cool, until no longer steaming.
- Place all ingredients in the blender and buzz them up until smooth.
- Taste for seasoning. Add up to 2 tsp more Super Chunk. Add this one at a time, stir, taste again. This is really to personal taste. You can always add more, but you can't take it out.
