Fish is healthy, Fruit is healthy. Put them together and you have a healthy combination. To be clear we are adding butter to this dish so just hold on the butter elsewhere in your meal and you’ve got something light and oh so delicious.

Lemons

When I was in Italy last summer, everywhere there were lemons. I love lemon. It’s fresh and bright. I particularly love Meyer lemon (sorry Amalfi and Sorrento). They are sweet and have a thin skin, so very little of the bitter pithy part.

The nice thing about lemons is they are good cooked as well as juiced or zested. In this recipe we’re baking the thin slices of Meyer lemon, then we eat them like candy with the fish. They provide their juice and bright citrus flavor.

Fish

I like cold water fish mostly. It has a bit of inherent fat and I find the fish is flakier as opposed to mushy or too firm and dry. For this recipe we used Pacific Cod. It’s a solid piece of fish that is delicious even slightly overcooked. I always go for the wide operating window when it comes to my meat and fish.
