When I was in Italy last summer, everywhere there were lemons. I love lemon. It’s fresh and bright. I particularly love Meyer lemon (sorry Amalfi and Sorrento). They are sweet and have a thin skin, so very little of the bitter pithy part.
The nice thing about lemons is they are good cooked as well as juiced or zested. In this recipe we’re baking the thin slices of Meyer lemon, then we eat them like candy with the fish. They provide their juice and bright citrus flavor.
Fish
I like cold water fish mostly. It has a bit of inherent fat and I find the fish is flakier as opposed to mushy or too firm and dry. For this recipe we used Pacific Cod. It’s a solid piece of fish that is delicious even slightly overcooked. I always go for the wide operating window when it comes to my meat and fish.

Ingredients
- 2 piece of fish (any firm flaky fish like salmon, cod)
- 6 slices of lemon (Meyer lemon if you can get them)
- 1/2 tsp Steakhouse seasoning
- olive oil
- 4 thin pats of butter (2 Tbsp total)
Instructions
- Pre heat oven to 350.
- Place 2 pats of butter on a baking sheet.
- Drizzle with olive oil.
- Place one slice of lemon on each pat of butter.
- Sprinkle a tiny bit of Steakhouse spice on the lemon.
- Place the fish on the lemon.
- Add remaining butter.
- Add another small sprinkle of spice.
- Bake about 10 minutes until done. (when a fork is inserted easily)
