I love beets. The color is crazy. Like a vegetable said “let’s rock this color!” I frequently forget to use gloves when I peel (love this peeler) them so I often end up with very bright finger tips. Even the golden beets will produce a bright color.

Beets are so good for you and they taste amazing with natural sweetness. They’re high in fiber, folate, and vitamin C, making them great for heart health and immunity.

They’re in season during the fall and winter months, typically from September through March, making them a hearty addition to cold-weather dishes. Beets come in various colors, from deep red in this picture to golden yellow.

In terms of flavor pairing, beets have a sweet, earthy taste that complements a range of ingredients. They are great with tangy goat cheese or creamy feta for a balanced contrast in salads. Citrus fruits, like oranges and lemons, enhance their sweetness and add a bright, refreshing note. Nuts, especially walnuts and pistachios, add nice crunch and a rich, nutty flavor that complements the earthiness of beets. If you want a heartier dish, roast them with carrots, potatoes, and parsnips, or combine them with quinoa for a filling, nutritious meal.
