If you’re wondering what to make for dinner tonight, do we have a great reccipe idea for you. That’s right a pork tenderloin sheet pan meal.
Sheet pans meals are kind of a thing now. I’ve been using sheet pans to roast veggies for decades now. Roasting vegetables is the easiest way to cook them and have them still retain flavor and some texture. I haven’t microwaved or steamed broccoli since I started roasting it with Super Chunk Steakhouse seasoning. There is some sort of magic with that veggie and that spice.
Actually, our steakhouse spice is pretty much magic with any veg and most protein. I do have my faves though. Broccoli, asparagus and mushrooms really are drool-worthy.
Anyway back to the sheet pan meal. The trend that is taking over. Well deserved too, because it’s so easy and doesn’t waste time.
We start by selecting foods that are going to cook at pretty much the same rate. We can do that by choosing lean meat that cooks quickly and veggies we can cut into sizes that match the cooking time. With this recipe that means we cut the pork tenderloin into 2″ wide chunks. We cut the butternut squash into 1-2″ cubes and sliced the stem of the broccolini so it cooks quickly as well.
So the entire meal doesn’t taste like one particular spice, I like to select a couple of spice flavor profiles that will go together.
- Pork tenderloin is delicious with Moroccan Twist spices on it. The pork takes on the flavors of the spices so nicely and makes a relatively mild meat taste amazing.
- Butternut squash is great with any spice that is sweet, maybe salty and since it can stand the heat (spice), we went Jamaican Jerk. Sweet Heat would be a milder alternative if you can’t take too much heat.
- Broccolini had to have the Super Chunk Steakhouse seasoning. For the reasons I mentioned above. It’s flipping amazing.

Notes
You can use chicken breast for this recipe if you prefer. Pound the breasts until each piece is the same thickness.
Ingredients
- 2 cups chopped brussels sprouts
- 2 cups of small potatoes cut into halves or quarters (depending on the size of the potato)
- 1-2 tsp Sauce Goddess Big Toms Roasting Rub and Brine spices
- 1-2 tsp Sauce Goddess Moroccan Twist
- 1 tsp Sauce Goddess Super Chunk Steakhouse seasoning
- olive oil for roasting (doesn't have to be extra virgin)
- 4 sprigs of fresh thyme
- 4 slices of lemon
Instructions
- Preheat the oven to 350.
- Prep the veggies.
- Carefully season the brussels sprouts and place them on one end of the sheet pan.
- Now do the same with the potatoes and the Roasting Rub spices spices. Place on the other end of the sheet pan.
- Sprinkle Super Chunk Steakhouse on both side of the chicken thigh.
- Strip the leaves of thyme off the stem and place on the chicken thigh.
- Place one lemon slice in the middle and wrap both ends to form a tube of chicken with lemon and thyme in the middle.
- Repeat with the remaining pieces of chicken.
- Please the chicken on the sheet pan.
- Bake at 350 for around 25 minutes. Each oven varies, so cook until is 160 degrees or the meat feels slightly firm to the touch. It will keep cooking while you get it on the plate so don't over cook it.
