These cookies remind my of ginger snaps but they are chewy. Perfect for a ice cream sandwich.

Ingredients
- 2/3 cup shortening
- 1/3 cup molasses
- 1 cup sugar
- 1 egg
- 2 cup flour (or substitute gluten free flour if you like)
- 1 tsp ginger
- 1 tsp cloves
- 1 Tbsp Sauce Goddess Moroccan spice blend
- 2 tsp baking soda
Instructions
- Mix the shortening, molasses, sugar and egg until smooth
- Sift the dry ingredients and add to the wet batter
- Mx to combine
- Refrigerate 1 hour
- Spoon the dough onto the cookie sheet at least 3" apart. These cookies can spread.
- Bake at 375 for 8-10 minutes
