A lot of our recipes are gluten free. Actually most of them. Typically tacos have a flour or corn tortilla to hold all the tasty ingredients inside. For this we are using baby romaine leaves as our lettuce cup for the tacos fixings. Whether you choose the chicken or shrimp option, or even go vegetarian. These lettuce cup tacos will be a delicious Mexican dinner. Slightly spicy and full of fresh veggies, they are now a healthy taco.
This is a great taco recipe when you're tired of ordinary tortilla taco shells. Crisoy and light , this could be the healthiest taco yet. Either way you'll never look at vegetation the same way again.

These little tacos with lettuce shells are perfect for a party, or tailgate. They are gluten free and can be vegetarian if you omit the chicken and substitute black beans instead.
Ingredients
Chicken or Shrimp
- 1 lb boneless skinless chicken thighs
- or
- 1 lb shrimp (shelled and deveined tail off)
- Sauce Goddess Latin Heat Spice Rub
Marinade (optional - use instead of rub)
- 1-2 Tbsp Sauce Goddess Latin Heat spice blend (use less if you don’t like it spicy)
- 2 Tbsp light olive, avocado or sunflower oil
- Juice of one lime
- Juice of one lemon
- ½ cup fresh cilantro leaves chopped up
Lettuce Cups
- 2-3 heads of baby romaine
- 1 cup grated cheddar or jack cheese
- 1 cup corn, frozen thawed
- Lime slices
- Avocado chunks
- Tomatoes, diced
Instructions
Prep
- Place all marinade ingredients in a zip top bag and add chicken.
- Refrigerate for 2 hours.
- Remove chicken/shrimp from marinade and discard marinade. If you are not using the marinade, sprinkle chicken with spice rub.
- Cook chicken on grill, in oven or on stove top until firm and meat temperature reaches 165 degrees.
- Remove from heat and set aside.

Leafy Cup Prep
- Gently slice off the bottom of the baby romaine. This will make it easier to remove the leaves. One head may give you 6-8 useful cups.
- Peal off sizes you want to use but you may need to cut larger heads into halves or quarters.
- Place cheese in the bottom of each lettuce cup.
- Add chicken.
- Add avocado, corn, and tomatoes.
- Squeeze a bit of lime on top.
- Optional toppings include salsa, sour cream or hot sauce.
- Optional cooked black beans instead of chicken.
