Ingredients
- 1 lb Chicken tenders (Can also substitute rotisserie chicken)
- 2 Tbsp Sauce Goddess Latin Heat seasoning
- 1 green onion, sliced thin
- 1 head of romaine, sliced into eatable chunks
- 2 medium tomatoes, diced
- 3 mini sweet peppers, sliced into rings
- 1 cup black beans
- 1 cup corn (frozen or canned, drained)
- 2 avocados, cut into chunks
- 2 limes, juiced
- 1/4 cup cilantro leaves
- 2 Tbsp rice vinegar
- 2 Tbsp Avocado Lime Dressing
- 2 cups Corn Tortilla chips
Instructions
Cook the chicken
- Sprinkle 1 Tbsp Latin Heat on the chicken tenders.
- Grill on medium until they just cooked. Tip: They will be more rigid but not completely stiff if it's just barely done.
- If you are using rotisserie chicken, just toss the chopped chicken in the Latin Heat spices.
Make the salad
- Crumble the tortilla chips in a large salad bowl.
- Pour dressing and rice vinegar on the chips.
- Add remaining Tbsp of Latin Heat seasoning.
- Add the lettuce and toss to combine.
- Top with piles of tomatoes, beans, peppers, corn, avocado, cilantro and chicken.
- Squeeze lime over the salad.
- Toss to combine all.
- Serve in dinner-sized bowls and enjoy.
