Make Your Own Sausage

We love making sausage to use fresh in recipes. In particular two different versions: Chorizo and Breakfast sausage.
This sausage recipe is a master recipe of sorts. You can use this recipe, this idea to create a variety of your own sausages. How do you make chorizo sausage healthy? To make the healthiest version of chorizo sausage, we’re using our Latin Heat seasoning and ground turkey. Drop the mic, yes we’re only using 2 ingredients. Latin Heat seasoning is low sodium, so feel free to add your own salt if you want.
Breakfast sausage we make with Big Tom's Roasting Rub. It's got so much sage and rosemary and thyme, it makes a terrific breakfast sausage. We use ground turkey for that also.

Ingredients

1 package of ground turkey (1 lb-1.25 lb)

2-4 Tbsp of Latin Heat seasoning (the more the spicier)

salt as desired (this is a low sodium seasoning)
Directions
Combine the two completely.
Form a tiny patty and cook it to taste for seasoning.
Add more seasoning or salt as desired.
Use or freeze into .25 lb chunks.

This can be frozen and used right away.
