Everyone loves tacos. We are with you on that.
I love a moist juicy Pollo Asado (grilled chicken) taco. Here we're using the mini corn tortilla to make a tiny bite-size taco. Perfect for a party or have several as a meal.
This is the healthiest taco you can have. It's fresh and flavorful and a tiny bit spicy.

Chicken tacos are such a flavorful way to serve chicken. We're using Latin Heat seasoning to create Pollo Asado (grilled chicken).
Grill can use any type of tortilla you want. We're using the mini corn tortillas to keep it gluten free and a tiny snack size taco.

Ingredients

4 chicken thighs grilled with Pollo Asado recipe

24 mini corn tortillas

3 cups grated cheddar or pepper jack cheese

1 cup diced cilantro
-
2 avocados, sliced into long thin slices

24 cherry tomatoes (or grape tomatoes) sliced in half

3 limes cut into wedges (1 per taco)

light oil to brush on tortillas
Directions
Grill the Pollo Asado after it’s marinated for 4 hours
Slice into bite-sized strips
Prep other toppings
Brush the tortilla with a very light coating of oil
Heat on low in a skillet, until warm
Build the taco with all the fixins
